I notice that my “Upcoming Events” disappear 2 days before the actual date… is there a way to keep events as “upcoming events” until the date of the event?!?

If you can provide with WP Logins then we can take a closer look at it. Make sure you set the post as private reply so that only admin can see your wp logins.
