If I wanted to add a small testimonials section and/or page to the template, how could I go about it? Or what would be the best way to approach this task?

You can use Testimonials Shortcode to add Testimonials Section. You can integrate testimonials shortcode in a section fullwidth shortcode. Have a look at below code:
