I would like the whole theme to have a background color of blue. Also is there a way to edit without all shortcodes? Live editor that will work with this theme?

If you wish to use WordPress Live Customizer then theme is not designed for the live customizer. But if you wish you can use Visual Composer Plugin and use a live editor from that.

Regarding the background color options yes you can do that from theme options panel of the Anona where you can customize many things from the options panel.
