The number of people I have working on any given day is my limiting constraint – which equates to time. We also have approximated the time each package takes. I would like to automatically approve bookings if I have sufficient resources (time) based on appointments already booked at that location on a specific day and be notified when resources (time) is getting low so that I can add capacity.

Are there any recommended plugins that would enable me to do this?

Both the features which you have asked are custom works. It takes around 25 days to complete. I don’t think so there are plugins which support this functionality. We can do these for around 1800 $. If you are ready to pay, then let us know so, that we can give a quotation on that.

The feature which you have requested is unique so, it is useful only for you theme according to your requirements. We think it’s not necessary to add this feature in to our theme because not all the people will ask this feature. So, if you would like to pay for it then we’ll add this in to your theme.
