Is it possible to setup a few pages for packages ?
Fr example a package page for each category.
I have about 20 to list so would be useful if i could split them up by there categories.

Yes with categories option you can display the packages. Check the documentation for the shortcode *Package Shortcodes*

How do I change the colours on the packages ?
Packages coloring option isn’t there at moment but we will consider those features in the coming updates.
